
Today I finally got to cook meal number two. I am working through all my cookbooks by making two meals from each one. Earlier this week I made the mini sausage casserole (sausage muffins) and I loved them. They have been excellent to heat up for breakfast all this week. I was ready to cook this Spanish Salmon that same day but chose to finish up some leftovers first. We are finally done.
I have a few memories associated with salmon and none of them are from my childhood. I have no memory of eating any other fish aside from catfish. I need to ask my mother if this is true.
“Mother, is this true?”
Haha, that will be a test to see if she reads this. Back to the story, my first memory of having salmon is when I made it for my family and my daughter finished her entire plate. She was about 5 or 6 and it was the first time she had finished all her food. I pulled out all the ice cream and we celebrated this victory.

Tonight when I made the fish, she reminds me that she hates salmon. Oh how times have changed.
My next memory is when I made it with an almond encrusted topping and it was restaurant worthy deliciousness. It is still my favorite way to make it. I also think the way that Danielle Walker makes it in her new book – Eat what you love- is restaurant worthy. The down fall is that one child hates mustard and this has a mustard base. He can starve that night, I will eat his portion.
Just kidding.
Tonight’s meal was not restaurant worthy but I was pleasantly surprised that the bread cubes tasted nice in there.
Part one of the meal called for 3 red onions, 3 red bell peppers, and 3/4 cups of pitted green olives and cubed sour dough bread. I tweaked it some and added an orange bell pepper and only used one red onion.

Sprinkle 1 tsp of paprika and a dash of salt and pepper to the peppers, onions, and bread mixture. Drizzle with olive oil and toss to combine.

Place in the pre-heated oven (375*) for about 15 mins.
While that is cooking drizzle oil on the salmon and salt and pepper.
When the veggies and bread are done, nestle the salmon on top and cook for another 12-15 mins until fish flakes easily with a fork.


I personally enjoyed the meal but it was not something that my kids loved so if I cook it again I will add small potatoes to the veggies or serve it over a bed of rice for them.
