What’s cooking this week and the adventure continues.

Here on the home front, we had a few different things cooking but only one of them was part of our #turnthecookbook adventure where I am cooking 2 meals from each of my (over) 60 cookbooks. This is my third meal in this adventure from my 2nd cookbook. This week it is The Pioneer Woman-Dinner time- cookbook.

I did a poll on social media on which meal to make and the Pollo asado was a winner. You can find the full recipe here I have not made it before and I had to make some changes because of time. The original recipe called for cooking it on the grill and I believe that would have been amazing. I had to cook mine in the oven so that I could leave the house for a moment and even though it turned out fine, there just isn’t much that can replace crispy chicken skin. My family all enjoyed it and for that it is a win. For me though, I didn’t enjoy the time it took to marinate it. That is prob why I don’t do much baking, I don’t want to wait.

I loved how she used the citrus fruit as part of the marinade even after it was squeezed.

Once it was done in the oven, I did take it to a grill pan to crisp the skin up and that turned out great. If I cook it again, I will for sure do it with the time to cook at a grill pan or on an outside grill from the start.

Another dish I cooked was so simple because all the work was done for me. I got a seasoned boneless pork shoulder from Aldis for less than $5. I choose the oven way to cook it, though it could also go in the slow cooker and be perfectly done when you get home for the day. It took about 2.5 hours and was perfect to use for tacos, sandwiches, or with a side of mashed potatoes.  I will definitely be buying more of this to keep in the freezer.

 

 

The last meal was a family favorite. Egg Roll in a bowl.

This is one of those more versatile meals. I was out of green onions and lime juice this time and it still tasted great. I have made this without meat, we have added it to rice, and my kids add it to a burrito. So far it seems that it doesn’t matter how you eat it, Egg roll in a bowl still taste amazing.

I used the left over hamburger meat I had and added some sausage to it to help make more. I knew Caleb’s friend would stay for dinner and I wanted plenty of food to feed everyone.

I used the full head of a green and purple cabbage. I cut them in to long strips so they would fit into the food processor easier.

I am so glad I had my camera on hand to capture Ava’s response when she walked in to find we were cooking one of her favorite meals.

Here is what I have learned, it doesn’t freeze well because the cabbage holds a ton of water and so it doesn’t thaw out that well. You could  squeeze out the extra liquid but it may not be worth the effort. It does however, make excellent leftovers and will be what is for dinner again tonight.
