I ain’t ever grown a tomato in my fridge..

Well it’s true, I haven’t. I have had multiple packs of seeds in the drawer of my fridge and I have yet to grow a single thing. I have to actually do the work of taking the seed and plant it into the ground for it to grow. Each year I plant tomatoes, cucumbers, bell peppers, jalapenos, and this year I even added carrots. Guess what, They all started from seeds I have sitting in my fridge. img_5149

It’s funny though, tomatoes are the only thing to really grow perfectly in my garden and my son is the only one who really likes them. He can eat them right off the vine. Ok that’s not true. We have too many animals that eat them so we bring them in with the first hint of color. I have to let them finish ripening inside. Soooo let’s rephrase that -he eats them right off the counter. 😉

Today we had some friends over for lunch and I wanted to cook something that was easy but delicious. Grilled cheese and tomato soup was the perfect meal. It was supposed to be grilled ham and cheese but we forgot to add the meat 🥴 so it was just good ol’ grilled cheese.

Here to the recipe for the soup. It’s easy and can be made ahead of time and frozen for a few mths.

I have a big family so I used the huge can of Nina tomoates

Yep, all 106 oz of it.

Here are the ingredients (it would be pretty simple to divide this recipe to only make half this size.

*Obviously the tomatoes. Make sure the ones you buy are peeled tomatoes.

*8 garlic cloves minced

*2 yellow onions diced.

*2 cups of chicken broth. You can swap out of vegetable broth to make it vegetarian.

*4 tbs sugar

*1 tbs of oregano

*1/2 tbs of basil. You can add more but this brand of tomatoes has basil already added.

*2 cups of heavy cream

*And salt and pepper to taste.

Directions:

Dutch ovens are my favorite and I have more than I need, so I prefer to cook in one but any heavy bottom pot will do.

*Heat oil, about 2 tbs, in pan and add in the chopped onions and garlic. Stir and cook for about 5 mins.

*Add the peeled tomatoes, chicken stock, basil, oregano, and sugar. Taste and then season with salt and pepper to your liking. Stir and simmer. Cook for about 15 mins. Don’t forget to stir occasionally.

*now add the heavy cream and more salt and pepper to taste. Let it heat up some but not boiling

*Using an immersion blender, purée the soup to get rid of all the big chunks.

*You can serve it now (good option), with grilled cheese (best option), or store it in the fridge for a few days.

I may not love tomatoes but I do love cooking with them. 😍I also loved this analogy I had awhile back about the tomatoes in my fridge. I’m totally a visual learning and this helped me see a good lesson.

The first time I talked about no tomato plant in my fridge was at our church. My husband and I were doing the tithe message and I talked about how we have to actually plant the seed of our tithe for it to grow. God will do the watering for it to multiple, we just need to be faithfully in the planting.

I love how this principle applies to so many areas of our lives, unfortunately it can also be applied to bad things. Our actions are seeds into our lives and into the lives of those around us. Our words are most definitely seeds and boy can we spew those around like a high powered sprayer.  Gosh, even our thoughts can be seeds. The things we think really affect our hearts and can become full blown emotions. It seems that emotions can than become so powerful they then feel like fact to us, even if it is false.

It is safe to say that most of us do not want to, on purpose, plant nasty ol’ seeds that just grow into already rotten fruit. Planting seeds is easy but it may take some efforts to plant the good seeds. Take time to think about your actions, your words, and your thoughts. It is always worth the effort.
