A Christmas gift of meals.

Buying gifts for my husband is a pain in the butt. He buys what he needs leaving nothing to surprise him with during the holidays.

In the past I have gotten him things that were not quite right and they got returned. This year though, I got him something I knew he would love and couldn’t return it even if he wanted to. I decided to give him a full month, breakfast and dinner, of home cooked meals.

I actually love cooking, I’m just not very good at the pre-planning thing. This leaves me in a tizzy most evenings with frozen meat and nothing prepared hours past dinner time.

It is technically supposed to start on Jan 1 but I made a yummy NY steak on the 30th and counted it. I was also out of town helping my oldest daughter and her husband move on the 1st and 2nd. I guess that means I’m already in the month of January and failing lol.

My husband had surgery to repair a hip ligament. Because he couldn’t help our daughter move, he stayed back with two of our kids. I did put chicken in the slow-cooker for them to have while I was gone but my in-laws came to visit and brought up some food.

So day one…..on Dec 30 was the steak with roasted potatoes, bell peppers, broccoli, and rice. The steak was really good but cooled off by time I got everything done. I’m gonna work on that 😉

I had to google how to cook at New York Strip steak and found it to be pretty simple. After seasoning it with salt and pepper I seared it on all side. Next I added the rosemary, garlic, and butter to the pan. I kept spooning the butter over the steaks until the read about 143° Unfortunately it went from 130° to 150° in a split second and I thought I over cooked them. My husband likes them medium but overall they were fine.

The best part was the sauce afterwards. I deglazed the pan with some red wine, added one spoonful of jalapeño mustard, and more butter. Obviously with the butter it tasted awesome. I poured it into a cup to serve with the steaks. I had leftover sauce and put it in the fridge. The next morning it was perfect to use a cooking fat for the eggs and leftover steak. I am tempted to make the sauce again just to cook eggs in each morning.

I prob shouldn’t have cooked steak the first day bc he might be bummed with oatmeal for dinner one night. I should have started with that and gone up from there 🤪
